Anaheim is my go to, but you have to take what's available in your area and adjust from there.<br /><br />As for the veg broth, yeah. Agreed, it can mess up the flavor if you don't have one you like. Was rather unhappy with the recipe...Just made this. Was rather unhappy with the recipe, and made the following changes, which saved the recipe.<BR/><BR/>1) Added a couple of tomatoes, because the veggie broth gives the recipe too much of a random-veggie flavor (carrots, mmm!). If making again, I'd remove the broth completely, and replace it with tomato juice.<BR/><BR/>2) Doubled it to six chiles; all the fat in this recipe cuts the heat down, and you want the flavor of the chiles to come through. Even with this change, it's still nowhere near spicy. <BR/><BR/>3) Tossed in a roasted pasilla and/or a poblano.
